Plan your sushi night

Based on adult portions

What’s on the menu?
How hungry is everyone? Regular · 125 g dry rice / guest

A little extra for practice rolls and rice left in the pot

How we calculate +

Guest mode starts at 125 g dry rice per adult for a main meal, or 75 g with other dishes. Light appetite uses 80%; hungry uses 120%. Mixed mode adds rice for each roll or piece.

For 100 g dry rice: 120 ml water, 20 ml rice vinegar, 12 g sugar and 3 g salt; estimated yield is 240 g cooked rice. These are planning estimates. Water absorption varies by rice, soaking and equipment; follow your rice packaging first.

Hosomaki, uramaki and temaki use half a nori sheet per roll. Gunkan uses one sheet per 8 pieces. Nori is rounded up to whole sheets. Guest mode assumes a mixed meal with about 2 sheets per person.

A LITTLE KNOW-HOW

A little care.
Really good rice.

You have the ratios. Here’s what comes next.

  1. 01

    Rinse & soak

Rinse gently until the water is mostly clear. Drain, then soak for about 30 minutes. Soaking water counts toward the total cooking water.

  2. 02

    Cook & rest

Cook according to your rice and equipment instructions. Rest with the lid on for about 15 minutes for even moisture.

  3. 03

    Season & fold

Dissolve sugar and salt in rice vinegar. Fold into warm rice with slicing motions, without crushing the grains.

  4. 04

    Cool & roll

Fan gently until comfortable to handle. Cover with a damp cloth to prevent drying, and use promptly.

A few things worth knowing

How much rice should I plan per person? +

Start with 125 g dry rice per adult for a main meal, or 75 g when serving other dishes. Adjust for appetite. If you know your roll or piece counts, Mix & match gives a more direct estimate.

What counts as one roll? +

Hosomaki is one half-sheet nori roll, typically cut into 6 pieces. Uramaki is one half-sheet roll, typically cut into 8. Temaki, nigiri and gunkan are counted individually. Cutting a roll into more pieces does not change its rice quantity.
